Duck: From butchery to curing and cooking, you'll learn different charcuterie techniques which use every part of the duck
Salami & Chorizo: Learn how to butcher your meat, blend your own salami and chorizo, cure and ferment and create your own sausage
Bacon: Work with butchered cuts of heritage breed meat ranging and learn about salami and bacon production
