If you fancy rolling up your sleeves and getting stuck into some proper British baking, this full day course in Dorset is just the ticket. Your teacher for the day is Paul, a master of the craft with more than forty years’ experience, twenty of which have been spent passing on his skills to eager bakers just like you. Things start off with a relaxed chat over coffee as you go through the plan for the day, before diving straight into mixing, kneading and shaping. You’ll work with white, wholemeal and granary doughs, as well as having a go at the much-loved West Country saffron dough cake. Under Paul’s watchful eye you’ll learn to shape your bread into rolls, plaits, bloomers and cobs, while also picking up the secrets of fermentation that turn a good loaf into a great one. Once your creations are safely in the oven, there’s time to take a tour of the working watermill that hosts the course, giving you a real taste of traditional bread-making heritage. The grand finale comes, of course, with the tasting – the moment where all your hard work pays off in a warm, crusty, utterly delicious slice of real bread.
