Under Paul's friendly guidance, you'll try your hand at baking a variety of classic treats, from rustic pain de campagne filled with walnuts to perfectly crisp baguettes and buttery croissants. You'll learn how to work with traditional starters, shape dough into beautiful boules and batards, and master the delicate technique of laminating to achieve that signature light and flaky finish. While your bakes work their magic in the oven, you'll take a fascinating tour of the working watermill where the class takes place.
